So here's the second famed recipe from Rachel Ray's 30-Minute Meals cookbook that turned out amazing:
"You-Won't-Be-Single-For-Long Vodka Cream Pasta"
1 tablspn extra-virgin olive oil
1 tblspn butter
2 garlic cloves, minced
2 shallots, minced
1 cup vodka
1 cup chicken stock
1 can (28 oz.) crushed tomatoes
salt and pepper
1/2 cup heavy cream
12 oz. pasta, such as penne rigate
20 leaves fresh basil, shredded or torn
Crusty bread
Put large pot of salted water on to boil.
Heat a large skillet over moderate heat. Add oil, butter, garlic and shallots. Gently saute garlic and shallots, 3 to 5 minutes to develop their sweetness. Add vodka. reduce vodka by half, 2 or 3 minutes. Add chicken stock and tomatoes. Bring sauce to a bubble, then reduce heat to simmer. Season with salt and pepper.
While sauce simmers, cook pasta in salted boiling water until al dente, a bit firm to the bite. While pasta cooks, prepare your salad or other side dishes.
Stir cream into the vodka sauce. When sauce returns to a bubble, remove from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Serve immediately, along with crusty bread. (Really terrific with a spoonful of parm on top.)
MM MM MM Delicious!!!
Don't forget the parmesan cheese on top, or mix it in for thicker sauce... or both!
Yummy!
Peace,

is there such a thing as a cookbook for extremely picky eaters b/c that's the book I need. my fiancé is the pickiest eater I've ever met. everytime I see a recipe that looks good that I'd love to try I have to think, "eh, nevermind. he won't eat that." I think I'll just make him cook for himself. :-P

Posted by: Sandy at January 23, 2005 04:33 AMGirl, Rob was so picky about food when I met him, but we've gotten over that. At this point he'll eat just about anything I put in front of him. He's learned to like a little experimentation with food and unfamiliar flavors and now we both get into trying whatever new things present themselves. But if you can't get him to join you in culinary delights, oh well! His loss! :o)

Posted by: Josh at February 7, 2005 09:46 AMGood luck! If that recipe doesn't have the women knocking your door down, I don't know what will. It's THA BOMB. Super easy (just don't add too much chicken stock and make sure to let the sauce cool about five-ten minutes, or it can be runny).
